御料理俎板本式之巻. [Onryōri manaita honshiki no maki].<BR> [True Method of Using a Cutting Board in Cookery].

Stock ID #219846 This intriguing manuscript, most likely dating from the late Edo or early Meiji period, centres on the use of the cutting board, knives, and the various parts of the fish. It also includes a colour illustration showing different types of fillets and their names. In this work, the cutting board and knives are presented not merely as cooking implements, but as sacred instruments endowed with something of a mythical power. One illustration of a fish identifies more than 20 separate sections, each with its own specific name. Another groups fish fillets into categories described as “bride fillets” and “bridegroom fillets”. When referring to this item please quote stockid 219846.
Manuscript, five colour and one black and white illustration, 24.6 x 16.2cm, four double-folded leaves, upper corners lightly damp stained, both the contents and handmade paper binding with paper ties, are marked and worn.
